We asked our executive chefs for their favorite summer dishes, and not surprisingly, everyone said Mussels & Clams Marinara. When we asked why, they all agreed that this flavorful seafood dish is a guest favorite and perfect for warmer weather.
Italian-inspired flavors combined with fresh seafood make this dish a crowd-pleaser whether you’re enjoying it at home or on the islands with your toes in the sand.
Ingredients:
2 lbs. clams, scrubbed clean
2 lbs. mussels, scrubbed clean
Angel hair pasta, cooked
1 quart prepared marina sauce
Garlic, to taste
¼ cup parsley
½ cup clam juice
Extra virgin olive oil
Salt & pepper, to taste
Instructions:
In a large pot, sauté garlic in olive oil until lightly browned. Add the clam juice and bring to a boil. Once boiling, add the marinara sauce, clams, and mussels. Cover the pot and cook until the shells open (about 5-10 minutes).
Once the shells have opened, pour the mixture over cooked pasta. Add parsley, salt, and pepper to taste, and serve.
Chef’s Tip: If a shell doesn’t open, do not eat it! Throw it away. It’s very common to find a few unopened shells after cooking, but these are not safe to eat.
